Power Salad

Ingredients

  • Ingredients: portions to your liking

    • Start with fresh lettuce mix of choice

    • ¼ cup of quinoa

    • ½ cup of roasted sweet potatoes

    • Add shredded or shaved brussels

    • ¼ cup of blueberries

    • Optional protein:

      • Grilled Chicken

      • Grilled Salmon

      • Grilled Shrimp

    • Optional toppings:

      • Sprinkle with feta cheese

      • Sunflower seeds

      • Pumpkin seeds


Instructions

  • Combine ingredients and serve

  • Optional: layer ingredients, mix in bowl, add dressing & serve
